Speaking of flavours, let’s take for example the Fossa Cheese (Ditch Cheese) - awarded in 2009 the prestigious PDO mark - which is the gastronomic symbol of Sogliano al Rubicone. The tradition was born in the Middle Ages: the peasants of Sogliano, in the late spring, went to the country to entrust their cheeses to the so-called ‘infossatori’, to store them during the summer and protected them from the predations of wars; in November, they then returned to pick up the cheese for the winter.

Sogliano certainly does not end here: the cultural landscape of Sogliano al Rubicone boasts museums and public and private collections, as well as large musical events during the summer; the natural beauty is exhibited in wonderful views visible across an extensive network of trails used for horseback riding, hiking and mountain biking.
